A moment caught to obtain the peerless deep pink hue before seven years of patient maturation coaxed out an aroma-laden bouquet of sublime finesse. Supreme balance on the palate, a unique shade of pink and a perlage of the tiniest bubbles. Vinification
Cuvée Annamaria Clementi Rosé is the maximum expression of pure Pinot Noir vinified in pink, in Ca ‘del Bosco style. The grapes, in compliance with our vinification method, are hand-picked in small boxes, are readily encoded and cooled in cold rooms. Each bunch is selected by expert eyes and hands, to then benefit from our exclusive “berry spa”. A particular system of washing and hydromassage of the bunches, through three soaking tanks and a system for complete drying. For de-stemming the bunches are transferred over the vat and then fall into it for gravity. This eliminates the traditional pumping systems, which are the cause of the breakage of the skins and the unwanted herbaceous notes. Following a short maceration of the grapes at a temperature of 14 ° C to obtain that particular intense pink color and that aromatic profile of extreme finesse and harmony that
will characterize the Cuvée Annamaria Clementi Rosé in the bottle. All stages of winemaking of the different base wines take place in small oak barrels obtained from selected woods and aged for at least 3 years and stored in deep and cool underground cellars. Alcoholic fermentation, malolactic fermentation and barrel aging last a total of 8 months.
The Cuvée Annamaria Clementi Rosé was born from the art of knowing how to assemble base wines from the 3 historic vineyards by selecting only the wine from best barrels.It is tapped by gravity and a pair of flying tanks transfers it by gravity, from the barrels to the blending tank. It takes at least an additional 8 years of aging on the lees to reach that olfactory harmony and excellent gustatory balance that make the Annamaria Clementi Cuvée

The dégorgement takes place in the absence of oxygen, using a system unique in the world, conceived and patented by Ca ‘del Bosco. This avoids oxidative shocks and further additions of sulphites and makes our Franciacortas purer, more pleasant and longer-lived. At the end each bottle packed it is uniquely marked, to ensure traceability.
